What Inspired You to Write Your Book?
I grew up in Portugal, not eating a lot of plant based foods, but eating delicious dishes made by my mum, who's a cook. When I turned vegan a few years ago, one of my main priorities was to create plant based versions of very typical Portuguese dishes. And that's how 'Plant based Portuguese' was created.
"Here’s a little fact you probably didn’t know: it was the Portuguese in the 16th century that taught the Japanese how to make tempura. In Portugal we have this traditional snack called ‘peixinhos da horta’- little fish from the garden. It is basically green beans dipped in tempura batter and fried. They have a lot of potential to be vegan, even the name would be a great vegan pun! But the majority of recipes I see have eggs. Well, not mine. Super easy and works perfectly well!"
